What to Serve at a Parish Potluck for 200

The failure mode of a 200-person potluck is predictable: plenty of desserts and salads, not enough hot protein. Plan the hot food as a purchase, and let volunteers cover the rest.
The working ratio
For 200 guests, budget two catered hot mains at roughly 5 ounces of protein per person, one starch, one vegetable, and 250 rolls. Volunteers reliably fill in salads, sides, and dessert without coordination.
Beverage service is the second most common shortfall. Plan on 2.5 servings per guest over a two-hour event, including coffee.
Logistics that decide the night
Two serving lines cut queue time roughly in half. A single line for 200 people takes about 35 minutes; two lines take under 20.
Label every dish with allergens. In an aging congregation this is not a formality — it is the difference between a guest eating and a guest going home hungry.
